dw eleven-13’s Chef Marthinus Ferreira has been named as one of the judges for the Africa and Middle East region of the S. Pellegrino Young Chef 2018 competition. Together with Sascha Triemer from Dubai and Dominique Grel from Mauritius, Marthinus will decide which of the ten semi-finalists in the region will go through to the grand finale in Milan next year.

On being selected, Ferreira says: “I feel very privileged and honoured to have the chance to be part of such a massive competition and to be involved with S.Pellegrino, which does so much for the gastronomy as a whole.”

The young chef who will go on to represent our region in the grand finale next year will have to impress all three judges in the cook-off in Dubai first. Chef Marthinus Ferreira says that he will be looking for a unique dish that tells a story using contemporary techniques, styles and trends. He adds: “Everything on the plate must be there for a reason and taste amazing.”

He believes that the competition will give invaluable experience to the young chefs, in that not only will they gain professional visibility, but they will have the opportunity to interact with chefs and restauranteurs from around the globe. “The judges taking part include those who have been decorated with multiple Michelin Stars, as well as those who own eateries that have been ranked amongst the best 50 in the world. As young chefs, the finalists will be exposed to a number of new avenues and get to engage with the likes of Scott Pickett, from Australia and Thailand’s Gaggan Anand,” he says

The finalist in each region will be mentored by one of the three regional judges in the run-up to the final. Ferreira hopes that, should he be chosen, he will be able to use his 17 years of experience working at some of the top restaurants in the world, to help the South Africa and Middle East finalist take home the S.Pellegrino Young Chef 2018 title.
